Hi folks! I'm at it again. I'm going for another 20 pound loss in ten weeks. I've recently had another baby, a little girl, she is now five months old and I'm ready to drop some weight.

Another Great Eating Day!!

Good evening everyone!
How are you all doing today? Good I hope!

I had a great eating day! I spent some time in the kitchen today and felt like a pregnant Betty Crocker. I cooked up some tasty dishes that are sugar free, white flour free and I think mostly processed food free.

The only way to make this whole foods way of eating stick is to make some really tasty dishes.

I started out the day making some steel cut oatmeal and topping it with walnuts and raisins and cinnamon for part of my breakfast. It tasted wonderful!

This is my mid-morning snack.
The ground turkey mixture that I had made up yesterday with salt and pepper added, two Brazilian nuts and some strawberries.

Then...I cooked up five slices of turkey bacon.
I wanted them extra crispy.

It worked half way. Turkey bacon doesn't crisp like real bacon, but this wasn't bad at all.

Then I added it to this.
Several potatoes that I cubed. I soaked this whole batch of potatoes in 1/4 cup of olive oil until all the olive oil was on the potatoes. Then I sprinkled it with garlic salt, paprika, parsley flakes and the crisped bacon.
It took about 45 minute to cook uncovered.
Doesn't this look divine?
And it's totally healthy!!

I paired this with some of the turkey mixture and some sour creme.
I need to get some fat free sour creme, but the potatoes tasted great with it.

Then for supper I decided to mix the potatoes and turkey together and sprinkle two table spoons of low fat cheese on it.
I stuck this plate in the oven for about 15 minutes, because I hate reheating such tasty food like this in the microwave.
Same with the pizza I made the family last night.
I re-heated the leftovers for lunch for the kids in the oven.
Then, it tastes like it did when you first cooked it up.
After I took it out of the oven.
Pure delight!

Can't forget a healthy spinach salad topped with Newman's Own oil and vinegar dressing.

For the rest of the family tonight,
I made up some cheesy chicken tacos.
Here, my 15-year-old daughter put together a taco salad by cracking up the taco shell.
Oh, and here is our five year-old daughter playing with a whole wheat tortilla.

I did try out some new chocolate protein powder that I forgot to take a picture of.
It was delicious!
Tonight I'm unthawing a 10 pound bag of chicken quarters so that I can put together a few healthy meals for the family for the next few days.
And chicken quarters are cheap! like 6 bucks!
And for a family of seven they make enough meat for two to three meals.

Other than that, I do have some interesting and disheartening information.
I worked my legs at the gym tonight and I noticed that I am not as strong as I was a few weeks ago. I noticed that a little last week too.
I feel like I get worn out more quickly.
Also, I feel like in some of my exercises, my belly is getting in the way.
Ok...so that isn't disheartening as much as it is...
well...expected?
When you get pregnant, your blood volume increases and so your heart has to work harder because it's pumping more blood around.
So, that could be part of it.
Maybe I ate too much at supper...
Who knows?
But I did the best I could without straining myself because you don't want to do that either.

  2. Today's food, well yesterday's food, looked so good. That ground turkey with the potatoes would be a great think to whip up. Thanks for the idea. Glad you were on track with eating. I know that makes you feel great. I had a pretty good day myself and am ready for a good run tonight. My legs are still a little soar from Sunday's run and football, so it will be a slow paced, easy run. Hope you have another great day and that you guys are having some good weather = )

    Why did I see that picture of your daughter and the first thing that I thought of was Leatherface from texas chainsaw lol...I just laughed so hard lol...your kids are too cute
