Hi folks! I'm at it again. I'm going for another 20 pound loss in ten weeks. I've recently had another baby, a little girl, she is now five months old and I'm ready to drop some weight.

I Couldn't Wait Until Next Weekend...

Hello everyone!
I couldn't wait until next weekend to try making spelt pancakes. The buckwheat pancakes that I made yesterday were just too much fun, and I knew these might taste even better.
Here's the finished product...

But here's what I began with...organic spelt grain.
Is costs $1.99 a pound.

I looked at a couple recipes on google and then just made it the way I wanted to.
The spelt grain is a higher calorie grain than buckwheat, so I cut down on the olive oil to try to keep the calories in line. I also never add the milk or sugar. It's amazing. You can make pancakes out of just about anything. This recipe made seven pancakes.
This is the recipe:
1 cup of spelt flour (which is 1/2 cup of grain )
2 teaspoons of baking powder
1 teaspoon of cinnamon
1 egg
1 teaspoon of olive oil
1/4 teaspoon of salt
3/4 cup of water
The batter was a little runny but poured fine.
This is how they looked cooking up.

It tasted AWESOME!
Each cake was 80 calories.
I was feeling stuffed about half way through the third cake.
I added one teaspoon of natural peanut butter.
With three pancakes, the peanut butter and two large eggs,
the calories came to 480.
Just loved these spelt pancakes!
I think I'd like to try millet next.
I'd also like to make some crepes.

Anyway, it's almost Monday.
I actually gained 8/10 a pound this morning
so now I'm back to losing four pounds in six days.
I was thinking the gain may have come because of those
silly "too-salty" buckwheat pancakes that I made yesterday.
Or I may not have gotten in enough water.
This is my second day in a row of rest.
I should be a-rari'n to go to the gym this week.

  1. Nice way to ditch that "white stuff!"

    I lost 1.1 lbs this week.....not great, but definitely a reflection of last week.

    Last week: I tracked on WW, I walked every lunchtime, enough to earn me the points I needed for a challenge, along with a lot of decluttering and heavy cleaning at home. I drank just enough water to squeak by.

    This week: Stepping it up a notch - back at the gym tonight after work - bag is packed and in the van. Water bottle on the desk - about to go refill. Breakfast, lunch and afternoon snack packed and brought to work. Vitamins in my drawer about to be taken and we're off!

    Bigger baby steps this week should translate into a bigger loss!

    I'm only doing my WI on Sunday mornings now, no more second guessing myself throughout the week...I'm just going to work my plan and WI only the one time.

    So, as I said, I'm with you, walking quickly behind you!
